This specially curated three-course experience showcases Heston Blumenthal’s most iconic, Michelin-starred creations, reimagined from historical recipes and served in a modern, elegant setting, all for AED 550 per person.

Starter: Earl Grey Tea Smoked Salmon (c.1730)

Lemon salad, gentleman's relish & bergamot. Gentleman's Relish was created in 1828 by an English man named John Osborn. Also called Patum Pepperium (pepper paste in Latin), main ingredients include anchovies, garlic, peppercorns and butter. It was used extensively in savories in gentleman's clubs; it was considered too strong for ladies (here the origin of the name), and too refined for hoy polloi, the common people.


Wine Pairing: Chateau St. Michelle & Dr. Loosen, Eroica, USA



Main Course: Beef Royal (c.1821)

Smoked anchovy, bay carrot, onion & calf’s tongue. Heston read the recipe, and it did seem to have potential. Here was a chef showing off his skills, producing a dish that could be used to impress distinguished guests. Beef, claret, truffles, tongue, anchovies had lots of the ingredients of classical French cooking and showed that England had an equally sophisticated gastronomic heritage.


Wine Pairing: Descendientes de José Palacios, Pétalos, Spain



Dessert: Olive Oil Perfume (bc.1350)

Pear, honey, and goat milk. In Greece and Rome, the abundance of olive oil made it the most popular oil for the perfume industry, though other oils such as almond were popular as well. Cheaper oil was better (and still is) because it has less of its own scent to compete with the fragrant materials.

Starter: The Truffle (c.1500)

Truffle, mushroom parfait & grilled bread


Main Course: Roast Cauliflower (c.1661)

Smoked brown butter, truffle & macrows


Dessert: Spiced Tipsy Cake (c.1858)

Spit roast pineapple


Additional à la carte dishes may be ordered following the set menu. Please note that drinks are not included in the Discovery Menu and are available separately. Dinner by Heston offers an exceptional selection of wines, craft cocktails, and non-alcoholic pairings, thoughtfully curated to complement the dining experience.
