Carbone offers a unique Italian-American dining experience that feels like stepping back into New York in the 1958s. The atmosphere is lively yet elegant, and the dishes are generous, meant for sharing with family and friends.



PAINT STATEMENT

  • A Celebrity Restaurant by Mario Carbone, Rich Torrisi, and Jeff Zalaznick 
  • Inspired by Italian-American restaurants in New York from the 1958s.

AGE POLICY


Lunch : (Weekend Lunch will be launched in November) 

  • All ages are welcome during the weekend lunch 


Dinner:  

  • Families with children aged 0-12 years old may reserve family seating only between 18:00 - 19:00 and must vacate by 21:00(This venue is not recommended for minors, as there are no kids menu and no baby highchairs offered)
  • Families with children aged 13 and above are welcome to make reservations at any available time before 23:30hrs (last reservation). 
  • After midnight, the bar remains open, and the venue is available only for 21 years old and above.

Dinner | Daily

  • 18:00 - 23:30 (Last Seating)
  • Last Food Order: 23:45


Bar | Daily 

  • 18:00 - 1:00am Last Drink Order: 00:45 (Sunday – Wednesday)
  • 18:00 - 2:00am Last Drink Order: 01:45 (Thursday – Saturday)


For guests reserving the last seating, the last food and beverage order time should be clearly communicated in advance to manage expectations, particularly in case of late arrival.

Food: 

  • À La Carte Dinner Menu
  • Set Menu for groups (9 guests and above handled by the outlet)


Beverages

  • À La Carte Menu
  • Offers around 450 wine labels (≈2,300 bottles) (Note: No wine cellar)


Half Board: Dinner Only

  • Guests receive a dining credit of AED 365/Adult and AED 185/Child per night, applicable to food only. 
  • If the bill exceeds the dining credit, the additional amount will be chargeable.


Allergies/Dietary Requirements:

  • Guests are encouraged to inform the restaurant of any allergies or dietary requirements in advance. 
  • For any complex dietary requirements, please check with the outlet  
  • Gluten-free: well accommodated (Gluten free pasta, meats, fish, antipasti).
  • Vegetarian: several options available.
  • Vegan: very limited options (only 1–2 dishes); guests should be advised to consider other restaurants.
  • Garlic allergy: extremely difficult to accommodate since garlic is integral to many dishes. Only 1–2 simple options possible, not suitable for a celebratory meal.
  • Please note that kosher meals are not available

Dinner Menu:

  • A la Carte Menu
  • A full dining experience at Carbone is typically structured as a four-course meal, which includes:
    1. Antipasti (Starter)
    2. Macaroni (Pasta)
    3. Secondi (Main course)
    4. Dessert: A sweet finish to the meal.
  • Guests are most welcome to select any course of their choice with no minimum spend policy as of now


Average Spend

  • The average spend is around AED 500–600 per guest for food only on a full Carbone dining experience (4 courses). 
  • This may vary depending on selections
  • Guests having lighter meals will spend less.

ELEVATED GUEST EXPERIENCES


Special Occasions: 

  • Guests celebrating special occasions can order desserts from the a-la carte menu on a chargeable basis (with a chocolate “Happy Birthday/Anniversary” tag and candle upon request)

  • Celebratory cakes (Cheesecake, Carrot or Chocolate) at AED 850 (good for 12 guests) with 24hrs prior notice 

  • Cakes purchased through hotel outlets can be brought to Carbone 

  • External cakes are accepted with a waver form upon arrival (if no desserts ordered during dining, AED 50pp will apply for external cake cutting)

  • Flower bouquet can be ordered while making a booking on Website & Sevenrooms

  • Strictly no table decoration 

  • No complimentary desserts

SEATING


Seating preferences can be accommodated & conformed through access rules based on the availability without any minimum spend as of now.

The floor plan is intended to help understand the restaurant’s areas and seating layout; however, it should not be shared with guests.

SMOKING POLICY 


  • Smoking is permitted in the bar and on the designated area of terrace.
  • Cigar menu is available at the bar
  • Cigar smoking may only be allowed after 11:00–11:30 PM to avoid disrupting dinner service. (This is still under review based on air circulation and guest experience.)

ENTERTAINMENT


  • Piped music from mid 20th century is played during the dining experience, transporting back to Manhattan in 1958, with Frank Sinatra playing in the background
  • Live DJ performs 11pm - 2am (Thur-Sat)

TERMS & CONDITIONS


Reservation & Cancellation Policies

  • Reservations are highly recommended to secure seating and guarantee a pleasant dining experience. 
  • Credit card details are required to confirm reservations (exception in Atlantis The Royal inhouse guests) 
  • Cancellations must be made at least 24 hours prior to the reservation. A fee of AED 300 per person will be charged to the card on file for late cancellations or no-shows.
  • In-house guests who wish to walk in without a reservation will be accommodated based on availability. 
  • External guests without reservations may be accommodated based on availability; however, please note that entry to the property might not be guaranteed without a booking confirmation.


Dress Code: Smart Casual

  • Gentlemen are requested to wear the following:

  • Long trousers or smart jeans

  • Shirts with sleeves

  • Closed shoes

  • UAE National Dress (Kandura and Abaya) is welcomed and considered appropriate for the venue.

  • The following dress code are not permitted:

  • Swimwear or beachwear

  • No shorts (even tailored)

  • Sportswear

  • Sleeveless shirts

  • Flip-flops

  • Caps

  • Children must follow the same dress code as adults.


Table Holding Time

  • Tables are held for 15 minutes
  • Carbone strictly enforces a 15-minute grace period. Late arrivals exceeding 15 minutes will forfeit their reservation

Group bookings of 9 guests or more, as well as exclusive hire inquiries, should be directed to the restaurant for handling, and a set menu will be offered.
